Ota sake brewery – A grateful heart for rice

Today I’d like to introduce another brewery called Ota sake brewery.

Ota sake brewery established in 1909.
The brewery is located in the town called Wakasa-cho, a town with rich nature environment. 95% of this town is forest.
The brewery is earnest in its efforts to produce high-quality junmai sake (sake made without added alcohol) by carefully preparing and maturing each grain of rice,
All of the rice used in the brewery is grown on Ota sake brewery’s own rice fields since 2004.

Although sake brewing was suspended in 1992 due to the Doji (The chief brewer) is advanced in age,
it was resumed in 2002 with a heart of gratitude for being able to brew sake,

Their representative brand “Benten Musume” is derived from Benzaiten, a local deity in Wakasa-cho.
Each tank is labeled “Benten Musume 1”, “Benten Musume 2”, and so on in the order.

In all brewing processes, the steamed rice is naturally cooled and the mash is pressed in a wooden tank, aiming to produce a junmai sake that is “even better when heated.” They also offer a variety of attractive fermented foods such as “amazake,” an additive-free sake made from rice, “narazuke,” locally produced daikon radish pickled in sake lees for two years, and “saba kurezushi,” mackerel sushi made using the traditional method without any additives.
